Pan-seared cobia with thyme butter

This simple dish is ideal for those busy mid-week dinners where you need something quick but don’t want to skip on flavor or nutrition. Pan-searing is an ideal way to cook firm fish such as Cobia, simply top with thyme butter and a squeeze of lemon. Serve with lightly steamed vegetables such as courgettes and carrots.

Add the chopped thyme into the softened butter. Put the mixture in the fridge to firm and chill. Pre-heat a sauté pan to a medium high heat. Season the fish with salt & pepper.

Add olive oil to the pan and wait for the smoking point. Add the fish, and sear on each side for approximately 5-7 minutes or until golden brown and the fish is fully cooked and flaky.
