Cobia Steak with Couscous and Cucumber Yogurt

Step 1

To prepare the couscous:Bring the chicken stock to the boil and add the couscous. Cover the pot with foil and set aside for a couple of minutes.Cut the bell peppers, chili and red onion into small cubes. Then put a pan on high heat and stir fry the vegetables.Add some lime juice and olive oil to the couscous, season with salt and pepper and set aside.

Preparation of the Cobia steak:1. Take the Cobia steak and season it with the Cajun spices, salt and pepper. 2. Grill the fish on each side for about 4 minutes or until golden and the fish easily flakes. 3. Dress with some fresh coriander leaves and olive oil.
